Hot water extraction is essential to obtain a high-quality, effective mushroom product, and is the traditional Asian method of extraction. The mycelium contains polysaccharides that are bound by the cell wall composed of indigestible chitin; the chitin must be dissolved in hot water to gently release the medicinal components. Conversely, grinding the mycelium or fungus can damage the long-chain polysaccharides and fails to remove the indigestible chitin (fiber), limiting the amount of therapeutic constituents that can be adapted per capsule. Standardization ensures that the final product contains a constant amount of polysaccharides to enable delivery of a therapeutic dose.
