Tapioca is the starch of manioc, a tropical tuber native to Brazil and now widely cultivated in Africa and Southeast Asia.
This slightly sweet-tasting starch, rich in starches, is an excellent thickening agent for gluten-free dishes and sauces.
An essential ingredient in many bread recipes, it is easy to store at room temperature.
