Recipe: button mushrooms with garlic

Recette : champignons de Paris à l’ail - La Boite à Grains

Ingredients:

  • 1 ½ tbsp. organic olive oil
  • 2 cloves of crushed organic garlic
  • 200 g (7 oz) small organic mushrooms
  • 2 tbsp. dry white wine (or wine vinegar)
  • 1 tbsp. organic tomato paste
  • 1 tsp. fresh thyme
  • salt and ground black pepper

Preparation:

  1. Heat the oil in a frying pan. Sauté the garlic for 1 minute over low heat while stirring.
  2. Add the mushrooms and stir to coat well with fat.
  3. Mix the wine and tomato paste in a bowl and pour it over the previous preparation. Add half of the thyme. Add salt and pepper. Cook over low heat, stirring occasionally, for 15 to 20 minutes: almost all the liquid should have evaporated and the mushrooms should be juicy and glossy.

Transfer to a serving dish. Serve hot, warm or at room temperature, sprinkled with the remaining thyme.
