Sweet potatoes are the star ingredient in these original and tasty crêpes. Choose your favorite toppings and enjoy a gourmet dish at lunchtime. breakfast or brunch.
Ingredients
- 1/2 cup sweet potato, cooked and mashed (measure after mashed)
- 1 egg + 3/4 cup egg whites
- 1 tbsp. coconut flour
- 1 tsp. cinnamon
- 1/4 tsp. baking soda
- 1/4 tsp. vanilla
- 1 tbsp. coconut oil
Preparation steps
1. Mash the sweet potato and whisk in the eggs. If the mixture is too thick to pour into the pan, add a little dairy-free milk, otherwise continue. Add the rest of the ingredients, except the coconut oil and toppings.
2. Mix until ingredients are well incorporated.
3. Heat a frying pan over medium heat, add the coconut oil and pour in about 1/4 of the batter. Cook until bubbles form on the top and the pancake is firm enough to turn. Turn and cook for a few more minutes, watching closely.
4. Serve the pancakes with a sprinkling of cinnamon and maple syrup or honey or 1/2 cup of berries.
