Recipe: pumpkin bites
3/4 cup organic pumpkin puree
1/3 cup organic hulled hemp seeds
2 organic eggs
1/3 cup Xylitol (or sugar of your choice)
2 tablespoons organic coconut oil
2 tsp organic pumpkin spice
1 tsp. organic vanilla extract
1 tsp. organic lemon juice
1/4 teaspoon sea salt
For the crust:
1/3 cup organic coconut flour
3 tbsp. organic coconut sugar
1-1/2 tablespoons organic coconut oil
Topping (optional):
Whipped coconut cream
Pumpkin spice
To prepare:
- Preheat oven to 350 C.
- Place 24 paper baking cups in muffin tins.
- Mix crust ingredients in a bowl. Spoon about 1 teaspoon of mixture into each paper muffin tin. Press mixture into bottom of pan with fingers or back of spoon. Set aside.
- In a food processor, puree pumpkin mixture ingredients until smooth.
- Divide the mixture between the pans over the top of the crust. Bake for 13 to 15 minutes, until slightly puffed but still soft.
- Cool completely before serving.
- If desired, garnish with whipped coconut cream and sprinkle with pumpkin spice.
Makes 24 pumpkin bites.
