Avocado and chia flour make excellent, high-fiber, healthy substitutes for regular flour and eggs in pudding mixes. If you don't have chia flour, simply put chia seeds in a high-speed blender or spice grinder and blend until you have a flour-like consistency. You can also use Prana's ground chia seeds. You can find coconut shavings in the healthy snack aisle at your local health food store.

Ingredients:
3 cups (750 mL) kefir
1 medium avocado, chopped (about 1 cup, 250 mL)
1/4 cup (60 mL) lime juice
1/4 cup (60 mL) honey
1 tbsp (15 mL) chia flour
1 tsp (5 mL) lime zest
2 tbsp (30 mL) coconut shavings
2 tbsp (30 mL) roasted almonds
Whipped coconut cream (optional)
Preparation:
In a blender, combine kefir, avocado, lime juice, honey, chia flour and lime zest and blend until smooth. Pour into 6 glasses or bowls. Cover and let set in the refrigerator for 20 minutes. Crush or grind coconut shavings and almonds until mixture resembles coarse crumbs. Before serving, garnish pudding with whipped coconut cream, sprinkle with coconut and almond crumbs.
