Ingredients
The sauce
- 20 cherry tomatoes or small garden tomatoes
- Olive oil
- 1 onion, chopped
- 1/2 green bell pepper, very finely diced
- 6-8 fresh basil leaves
- 2-3 sprigs fresh oregano
- salt and freshly ground pepper
The pasta
- two blocks of firm, organic tofu
- carrots
- zucchini
- eggplant
Preparation
For the sauce
- In a saucepan, sauté the onion and add the tomatoes, cooking until they explode!
- Blend in a blender, adding fresh herbs. Season with salt and pepper and add the diced peppers to the hot sauce.
The pasta
- Grate tofu, carrots, zucchini and eggplant into sauce,
- Reheat, season with salt and pepper
- Serve
