What a joy it is to smell the smells of grilled food in this summer time! The delicious BBQ season is finally back. However, we often forget about the vegetarians who also enjoy getting out their grill.
This recipe for a vegetarian skewer is sure to satisfy the hearts of vegan food lovers as well as those who are new to tempeh, a fermented soy protein that is even healthier than tofu. More and more, we must dare to cook vegetarian, because we know the impact of the overconsumption of meat on our health and more particularly, the one of grilled meat.
Try this tempeh skewer served with grilled pineapple, it will be a sure hit!
Preparation 15 minutes Cooking time: 10 minutes Level Level : Medium
Maceration 45 minutes to 2 hours
Ingredients
- 1 block of organic sesame tempeh, cut into 16 equal parts
- 2 coloured peppers, cut into 24 pieces
- 1 pineapple
Marinade
- ¼ cup tamari sauce or Bragg sauce
- 1 clove organic garlic
- 1 tsp. freshly grated organic ginger
- 1 tbsp of toasted sesame oil
- 1 tbsp. rice vinegar
- 1 tbsp. honey
Vinaigrette
- 2 tbsp of avocado oil
- 2 tbsp of toasted sesame oil
- juice of ½ lime
- Salt
Preparation and steps
- Prepare the marinade by whisking all the ingredients in a bowl;
- Place tempeh pieces in a shallow square container or 9x9 cake pan. Pour in marinade and cover with parchment paper or cellophane* for a minimum of 45 minutes;
- Meanwhile, clean the pineapple by removing the peel. Cut into half-inch-thick slices and remove core;
- In a small bowl, prepare the dressing and set aside;
- Once the maceration is complete, assemble the tempeh skewers by alternating the pieces of tempeh with those of peppers;
- Light the BBQ over medium high heat and cook the brochettes. and pineapple slices for 5 minutes on each side;
- Serve immediately, topping pineapple slices with dressing.
*This technique reduces the amount of air in the pan, forcing the tempeh to soak up the marinade. You can use this technique in any recipe that requires marinating.
