Recipe: Green Tomato Cake

A return to school is something to celebrate! So, to reward the little ones and their teachers, create this green tomato cake that will surely get the perfect score by satisfying both the beginner and the more experienced taste buds.

Makes 3 cakes

Ingredients

• 3 eggs
• 1 cup ofoil
• 1 tsp. salt
• 1 tbsp. vanilla
• 2 cups of sugar (can be replaced by 1 cup of white sugar + 1 cup of brown sugar or 1 cup of white sugar + 1 cup of maple syrup)
• 2 cups of grated green tomatoes, well drained
• 3 cups of flour (can be a mixture of white flour + whole wheat)
• 1 cup of chopped nuts
• 1 cup of raisins
• 1 tsp. of baking powder
• 1 tsp. baking soda

Preparation

1. Preheat oven to 350°F.
2. Beat the eggs and add theoilsalt, vanilla, sugar and tomatoes.
3. Mix together the following ingredients: flourthe nutsthe grapesthe baking powder and baking soda.
4. Add the liquid ingredients to the dry ingredients and mix gently.
5. Divide into 3 buttered loaf pans.
6. Bake for about 1 hour.
