Recipe: cranberry scones
Ingredients
- 2 cups organic spelt flour
- ½ cup of rolled oats organic
- ½ cup organic light cane sugar
- ½ tsp. baking powder
- ½ tsp. baking soda
- 6 tbsp. cold butter, diced
- 1 egg
- ½ cup buttermilk or plain yogurt
- _ cup dried cranberries
Preparation
- Preheat oven to 400°F (205°C)
- Grind rolled oats into powder in a food processor
- Place in a large bowl and add spelt flour, cane sugar, baking powder and baking soda
- Cut in the butter with a pastry blender until the mixture resembles coarse crumbs. Set aside in bowl.
- In another bowl, beat egg. Add buttermilk (or yogurt) and mix well.
- Stir into flour mixture to moisten dry ingredients.
- Add cranberries and mix gently
- Shape dough into 8 balls and place on a cookie sheet
- Bake for 17 to 20 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for 5 minutes and serve
