Recipe: cranberry scones

Recette: scones aux canneberges - La Boite à Grains

Ingredients

  • 2 cups organic spelt flour
  • ½ cup of rolled oats organic
  • ½ cup organic light cane sugar
  • ½ tsp. baking powder
  • ½ tsp. baking soda
  • 6 tbsp. cold butter, diced
  • 1 egg
  • ½ cup buttermilk or plain yogurt
  • _ cup dried cranberries

Preparation

  • Preheat oven to 400°F (205°C)
  • Grind rolled oats into powder in a food processor
  • Place in a large bowl and add spelt flour, cane sugar, baking powder and baking soda
  • Cut in the butter with a pastry blender until the mixture resembles coarse crumbs. Set aside in bowl.
  • In another bowl, beat egg. Add buttermilk (or yogurt) and mix well.
  • Stir into flour mixture to moisten dry ingredients.
  • Add cranberries and mix gently
  • Shape dough into 8 balls and place on a cookie sheet
  • Bake for 17 to 20 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool for 5 minutes and serve
