Chocolate and peanut butter protein bites

Ingredients 

Preparation 

  • Mix the brown rice cereal and two tablespoons ofchopped peanuts in a large bowl.
  • In a small saucepan, combine peanut butter and brown rice syrup or the maple syrup and heat over low heat until liquid and well blended. Turn off the heat and stir Vega Protein & Green Vegetables and salt.
  • Coat a spatula with non-stick spray and pour the peanut mixture into the brown rice cereal mixture, stirring until all ingredients are combined. Feel free to use your hands!
  • Once the mixtures are well incorporated, set aside and leave to rest.
  • In a separate saucepan, melt some vegan chocolate chips with two teaspoons ofcoconut oil.
  • Using an ice-cream scoop, a spoon or your hands, roll the dough into 14 balls and place them on parchment paper. Alternatively, you can press the entire mixture into a parchment-lined "8x8" mold.
  • Dip balls in chocolate or spread chocolate evenly. Sprinkle with remaining chopped peanuts and sea salt.
  • Refrigerate for at least 30 minutes or until chocolate hardens.
  • Store in an airtight container in the refrigerator for up to two weeks, or freeze.
