Buckwheat Granola with Pecans, Chocolate and Coconut

Buckwheat Granola with Pecans, Chocolate and Coconut

Ingredients

  • 3 cups rolled oats
  • 1 cup buckwheat
  • 1 1/2 cups pecans
  • 1/4 cup chia seeds
  • 1/2 tsp. sea salt
  • 1/3 cup coconut oil
  • 1/3 cup maple syrup
  • 1/2 cup cocoa powder
  • 1/4 cup organic coconut sugar
  • 1/2 tbsp ground cinnamon

Steps

  •   Preheat oven to 350°F.
  •   In a bowl, combine oats, buckwheat, chia seeds, coconut sugar, lightly chopped pecans and ground cinnamon.
  •   In a small saucepan over medium heat, melt coconut oil, add maple syrup, cocoa powder and salt. Stir until smooth.
  •  Mix the dry ingredients with the wet ingredients until the cereal is perfectly coated.
  •  On a baking sheet lined with parchment paper, spread the cereal mixture evenly and fairly evenly.
  • Bake for approx. 15-20 minutes at 350°F. Remove the baking sheet from the oven, and break the granola into large pieces. Bake for a further 5-10 minutes, stirring regularly.
  • Remove from oven and let cool. Store in an airtight container for one week.
