Ingredients
- 2 tablespoons chia seeds
- 6 tbsp. water
- 2 ripe organic bananas
- 1/3 cup natural peanut butter
- 1 ½ cups rolled oats
- ½ cup dried cranberries or mixed dried fruit
- ½ cup mixed nuts and seeds (chopped almonds, pumpkin and sunflower seeds)
- 4 tbsp. shredded coconut
Preparation and steps
- Preheat oven to 350o F;
- In a small bowl, combine chia seeds and water. Let stand a few minutes or until gelatinous;
- In a large bowl, mash bananas with the back of a fork and stir in peanut butter. Mix vigorously and add the chia seed mixture;
- Gradually add the rolled oats and toppings (fruit, nuts and coconut), mixing continuously;
- On a baking sheet greased with coconut oil, shape 15 medium-sized cookies, making sure to feel around;
- Bake for 15 minutes, or until the edges of the cookies are lightly golden;
- Store cookies individually for an easy snack to incorporate into your hiking bag.
Note that this cookie is vegan, with no added flour or sugar!
