Hiker's cookies: home recipe

Biscuits du randonneur: recette maison - La Boite à Grains

 

Ingredients

  • 2 tablespoons chia seeds
  • 6 tbsp. water
  • 2 ripe organic bananas
  • 1/3 cup natural peanut butter
  • 1 ½ cups rolled oats 
  • ½ cup dried cranberries or mixed dried fruit
  • ½ cup mixed nuts and seeds (chopped almonds, pumpkin and sunflower seeds)
  • 4 tbsp. shredded coconut

 

Preparation and steps

  • Preheat oven to 350o F;
  • In a small bowl, combine chia seeds and water. Let stand a few minutes or until gelatinous;
  • In a large bowl, mash bananas with the back of a fork and stir in peanut butter. Mix vigorously and add the chia seed mixture;
  • Gradually add the rolled oats and toppings (fruit, nuts and coconut), mixing continuously;
  • On a baking sheet greased with coconut oil, shape 15 medium-sized cookies, making sure to feel around;
  • Bake for 15 minutes, or until the edges of the cookies are lightly golden;
  • Store cookies individually for an easy snack to incorporate into your hiking bag.

Note that this cookie is vegan, with no added flour or sugar!
