Early Wonder Tall Top organic beet from Jardins de l'Écoumène offers tasty, smooth, uniform roots. This ancient variety produces beautiful, broad green leaves with red veins.
Because the young, slightly flattened roots, 3 to 7 cm in diameter, are much more tender than the larger roots, they should be picked at this stage of ripening. The roots are excellent marinated, raw, cooked or in borscht (beet soup).
