Meunerie Milanaise is a family-run business. All the grains we use come from organic farms, which use only compost, green manure and healthy crop rotations to maintain high soil fertility.
Organic chickpeas
Originally from the Middle East, chickpeas are a staple of traditional diets in North Africa, India, Spain and the south of France. Sometimes called garbanzo, this legume has been cultivated in the Mediterranean region for over 5,000 years. The Latin word for chickpea, "arietinum", means "little ram" and refers to the irregular shape of chickpeas, reminiscent of a ram's head. Chickpeas are an excellent source of folic acid and potassium, and a good source of iron, magnesium, copper, zinc and phosphorus. It contains thiamine, niacin, vitamin B6 and calcium. It is a source of fiber. Chickpeas are said to be diuretic, stomachic and vermifuge.
What to eat
- Soup/salad/paste/purée
- Typical Middle Eastern dishes such as hummus and falafel
- Season cooked chickpeas and eat as a snack
- Add chickpeas to pasta topped with olive oil, feta cheese and oregano
Cooking
Soak chickpeas for 4-6 hours or overnight. To cook, bring to the boil and simmer for about an hour or until tender.
