Toasting quinoa flour reduces its distinctive odour and bitterness, and brings out its nutty flavours.
To toast, place the flour on a rimmed baking sheet lined with parchment paper. Spread a layer no thicker than 1/4 inch. Bake at 220F for 90 minutes. Remove from oven and let cool before storing in the refrigerator or freezer.
