Organic Red Aztec Spinach

Jardins de l'Écoumène's organic red Aztec spinach is a popular variety in Mexico.. The flower buds can be prepared in many ways: coated in a paste of eggs, flour and grated cheese, then fried in melted bacon; steamed; sautéed in butter or oil; in soups and gratins; or served with pasta.

Seeds that are still fresh or dried and soaked in milk for several hours are delicious and highly nutritious. Dried seeds can also be ground into flour and incorporated into breads and muffins.
