Les Jardins de l'Écoumène's organic white turnip with purple collar is sown in August and harvested around 55 days after sowing. The roots can be harvested at a later stage, but it's best to do so after a few frosts to increase their sugar content and improve their flavor.
The root, rich in vitamin C, iron and calcium, will have crisp, sweet, juicy flesh. This turnip works wonders in soups, stews and purées. As for the leaves, they enhance the taste of salads and make a worthy substitute for spinach in recipes.
