Tapioca (cassava) flour

Tapioca flour is ground and granulated almost to a powder from the dried root of the cassava plant. It is floury and a little sweet, a ideal for thickening soups, sauces, dips, pie fillings and puddings. It can also be used in gluten-free breads, giving them a spongy texture, easy browning and a crispy crust. Gluten-free.
