Chocolate fruit and almond tart

Ingredients
- 250 ml (1 cup) pitted dates
- 60 ml (1/4 cup) water
- 250 ml (1 cup) plain whole almonds
- 300 g (2 x 150 g) almond silken tofu
- 210 g (7 oz) semi-sweet chocolate, melted
- 30 ml (2 tbsp.) sweetened cocoa powder
Preparation
- Place dates and water in a small bowl. Heat in microwave for 1 minute to soften dates. Pour into a food processor.
- Add almonds and pulse until lumpy.
- Pour into a buttered tart tin. Spread well with your fingers, building up the crust slightly around the edges. Set aside to cool.
- In a bowl, vigorously whisk together tofu, melted chocolate and cocoa powder. Pour over crust and refrigerate for at least 12 hours.
- Just before serving, garnish generously with fruit of your choice. For a festive, gourmet touch, decorate your fruit with a drizzle of white chocolate.
