Gluten-free granola bar

 Ingredients

  • 1/3 cup of honey
  • ¼ cup coconut oil
  • ½ cup sunflower butter
  • 2 eggs
  • 2 cups of rolled oatmeal (certified gluten-free if necessary)
  • 1 cup Nature’s Path Hemp Plus® granola
  • 1 cup buckwheat flour
  • 3 tablespoons of chia seeds
  • 1 teaspoon of cinnamon
  • ½ cup dried fruit (or chocolate chips for more decadent bars)
  • ½ cup seed mix (sunflower, pumpkin, hemp)

 

Preparation

  • Preheat the oven to 350 degrees F.
  • In a small pot, melt the coconut oil, sunflower butter and honey. When the texture becomes homogeneous, remove from the heat then add the eggs. Brew.
  • Mix the dry ingredients (oats, granola, flour, chia, cinnamon) in a medium bowl.
  • Add the oil mixture to the dry ingredients and stir vigorously.
  • Add the dried fruits then the seeds while continuing to stir.
  • Grease a 9 x 13 cake pan with coconut oil then add the soft bar mixture. Feel free to use your hands and press firmly to distribute the mixture evenly.
  • Bake for 25 minutes or until the sides turn golden brown.
  • Remove from the oven then leave to rest for around ten minutes before cutting them into individual portions.
  • The bars will keep for 5 days in an airtight container.

This recipe is very well balanced. I love passing these bars on to my kids for school snacks or enjoying them with a nice chai tea.

You will notice that my recipe contains a good amount of fat, and that is intentional! By pairing fats with fiber and proteins, we achieve better glycemic stability and more sustained energy.
