Gluten-free granola bar

 Ingredients

  • 1/3 cup of honey
  • ¼ cup coconut oil
  • ½ cup sunflower butter
  • 2 eggs
  • 2 cups of rolled oats (certified gluten-free if required)
  • 1 cup Nature's Path® Hemp Plus® granola
  • 1 cup buckwheat flour
  • 3 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • ½ cup dried fruit (or chocolate chips for more decadent bars)
  • ½ cup mixed seeds (sunflower, pumpkin, hemp)

 

Preparation

  • Preheat oven to 350 degrees F.
  • In a small saucepan, melt coconut oil, sunflower butter and honey. When smooth, remove from heat and add eggs. Stir.
  • Mix the dry ingredients (oats, granola, flour, chia, cinnamon) in a medium bowl.
  • Add the oil mixture to the dry ingredients and stir vigorously.
  • Add the dried fruit, then the seeds, while continuing to stir.
  • Grease a 9 x 13 cake tin with coconut oil, then fold in the soft-bar mixture. Feel free to use your hands and press firmly to distribute the mixture evenly.
  • Bake for 25 minutes, or until the sides turn golden.
  • Remove from oven and let stand for ten minutes before cutting into individual portions.
  • The bars will keep for 5 days in an airtight container.

This recipe is very well balanced. I love passing these bars on to my kids for school snacks or enjoying them with a nice chai tea.

You'll notice that my recipe contains a fair amount of fat, and that's intentional! By pairing fat with fiber and protein, we achieve better glycemic stability and more sustained energy.
