Instructions for Triple Chocolate Fudge Brownies

Base:

  1. Place the cashews in a food processor, and blend to reduce to small pieces.
  2. Add the shredded coconut and blend. Add the dates and blend, then add the cocoa powder and blend again to obtain a smooth paste. Finish by adding the maple syrup and salt, and continue mixing to obtain a creamy texture.
  3. Press the mixture into a 20x20 mould lined with parchment paper.
  4. Leave to firm up in the fridge while you prepare the filling.

Topping :

  1. In a food processor, combine maple syrup and coconut oil.
  2. Add cocoa powder and salt and blend again.
  3. Pour the filling over the base of your brownie and finish by adding the cocoa nibs on top.
  4. Leave to firm up in the freezer for 60 minutes. Keep in the freezer for 1 month.
