Recipe: Kefir and lime pudding from the Keys

Avocado and chia flour make excellent, healthy, fiber-rich substitutes for regular flour and eggs in cream desserts. If you don't have chia flour, simply put some chia seeds in a high-speed blender or spice grinder and blend to the consistency of flour. You can also use Prana's ground chia seeds. You'll find coconut shavings in the healthy snack aisle at your local health food store.

Total time: 30 minutes
Output : 6 portions
Ingredients:
3 cups (750 mL) kefir
1 medium avocado, chopped (approx. 1 cup, 250 mL)
1/4 cup (60 mL) lime juice
1/4 cup (60 mL) honey
1 tbsp (15 mL) chia flour
1 tsp (5 mL) lime zest
2 tbsp (30 mL) coconut shavings
2 tbsp (30 mL) roasted almonds
Whipped coconut cream (optional)
Preparation :
In a blender, combine kefir, avocado, lime juice, honey, chia flour and lime zest and blend until smooth. Pour into 6 glasses or bowls. Cover and chill in the fridge for 20 minutes. Crush or grind coconut shavings and almonds to a mixture resembling coarse breadcrumbs. Before serving, decorate the pudding with whipped coconut cream and sprinkle with coconut and almond crumbs.
