Tabouleh is a Mediterranean dish that originated in Lebanon. In itself, tabouleh is a salad of fresh parsley, drizzled with olive oil and lemon juice. However, traditional tabbouleh contains bulgur, a grain product derived from wheat that may not be suitable for everyone.

This tabbouleh recipe is 100% raw and grain-free, making it accessible to people with more specific dietary preferences or restrictions. It's a quick and healthy alternative to traditional tabbouleh. This tabbouleh is easy to prepare and offers a burst of freshness. To try this tabbouleh is to adopt it!

Ingredients

  • 2 cups fresh parsley, washed and stems removed
  • 2 cups fresh coriander, washed and stems removed
  • 300 g cherry tomatoes, washed and halved
  • 1/3 cup of shelled hemp hearts
  • ¼ finely chopped yellow onion
  • ¼ cup extra-virgin olive oil
  • Juice of one freshly squeezed lemon
  • 1 pressed garlic clove
  • Herbamare salt

Preparation

  1. In a salad bowl, combine the parsley, tomatoes, hemp and onions.
  2. In a bowl, whisk together the olive oil, lemon juice and garlic.
  3. Pour this vinaigrette over the tabbouleh.
  4. Season generously with salt and toss.
  5. Serve immediately or store in an airtight container in the refrigerator for up to 24 hours.
