Tabouleh is a Mediterranean dish that originated in Lebanon. In itself, tabouleh is a salad of fresh parsley, drizzled with olive oil and lemon juice. However, traditional tabbouleh contains bulgur, a grain product derived from wheat that may not be suitable for everyone.
This tabbouleh recipe is 100% raw and grain-free, making it accessible to people with more specific dietary preferences or restrictions. It's a quick and healthy alternative to traditional tabbouleh. Ingredients
- 2 cups fresh parsley, washed and stems removed
- 2 cups fresh coriander, washed and stems removed
- 300 g cherry tomatoes, washed and halved
- 1/3 cup of shelled hemp hearts
- ¼ finely chopped yellow onion
- ¼ cup extra-virgin olive oil
- Juice of one freshly squeezed lemon
- 1 pressed garlic clove
- Herbamare salt
Preparation
- In a salad bowl, combine the parsley, tomatoes, hemp and onions.
- In a bowl, whisk together the olive oil, lemon juice and garlic.
- Pour this vinaigrette over the tabbouleh.
- Season generously with salt and toss.
- Serve immediately or store in an airtight container in the refrigerator for up to 24 hours.
