The harvest season is in full swing. In the markets, there is an abundance of summer vegetables including peppers, tomatoes and cucumbers.
This Greek salad with quinoa allows you to reinvent the traditional Mediterranean dish by adding a protein grain of choice: quinoa.
With the addition of our homemade Greek dressing, this Greek salad with quinoa offers a wonderful combination of flavors and freshness. Prepare this Greek salad quinoa for healthy weeknight dinners, a filling dinner or to get your friends talking during the next potluck meal.
Ingredients
- 1 cup of organic royal white quinoa GoGo Quinoa rinsed and drained
- 2 teaspoons ofavocado oil
- 12 cherry tomatoes, cut
- 1 cup diced cucumber
- ½ red pepper, cored and chopped
- ½ finely chopped red onion
- 12 Kalamata olives (pitted or not)
- 100 g of feta cheese (goat, cow or sheep)
- Fresh basil to garnish
Dressing
- 1/3 cup ofcold pressed olive oil
- 1 tablespoon of apple cider vinegar
- ½ squeezed lemon
- 1 clove of garlic, chopped
- 1 teaspoon each of the following herbs: dried basil, dried peppermint, dried oregano
- Salt and pepper
Preparation
- In a medium-sized pot, brown the organic royal white quinoa GoGo Quinoa with avocado oil for 2 minutes.
- Add 150 ml of water (1 ½ cups). Bring to a boil before reducing heat to low. Cook uncovered for 12 to 15 minutes, or until the cooking water is completely absorbed and the organic royal white quinoa GoGo Quinoa beaded.
- Refrigerate it organic royal white quinoa GoGo Quinoa for a minimum of 30 minutes.
- Meanwhile, prepare the vinaigrette by whisking together all the ingredients for the homemade Greek vinaigrette.
- To assemble the salad: Combine vegetables, olives and feta cheese in a salad bowl. Add the organic royal white quinoa GoGo Quinoa cooled and drizzle with the homemade Greek vinaigrette. Garnish with fresh basil leaves.
Conservation of the salad
This salad will keep for 2 days in the refrigerator. To extend shelf life, add vinaigrette just before serving. This way, the salad will keep for up to 4 days.
