Recipe: green apple and celeriac salad

Ingredients
- 3 green apples, with or without skin
- 1 celeriac, carefully peeled
- 15 ml finely ground flax seeds
- 45 ml fat-free sour cream
- 15 ml strong mustard
- Lemon juice
- Salt and freshly ground pepper
Preparation
Finely julienne or chop the green apples. Grate or finely julienne the celeriac. Soak grated celeriac in lemon juice to prevent oxidation. In a large bowl, mix the strong mustard with the sour cream. Add celery root and green apples to this mixture. Season to taste Just before serving, sprinkle with ground flax seeds.
