Ingredients
Salad
- 2 large sweet potatoes, cooked, cooled and diced
- 6 cups kale, finely chopped
- 2 cups red cabbage, finely chopped
- ¼ cup hemp seeds
Dressing
- _ cup sesame butter (tahini)
- cup of vinegar apple cider vinegar
- _ cup lemon juice
- 1 tbsp. honey
- 1 tbsp minced ginger
- 1 clove garlic, minced
- 1 tbsp. fresh coriander, minced
Preparation
- Place salad ingredients in a bowl and season with hemp seeds.
- In a sealable jar (such as a Mason jar), place the dressing ingredients and mix vigorously.
- When you're ready to serve, pour the dressing over the salad, toss and eat!
