Sprouted lentil and pear salad

SproutsWe soak our seeds (they should not be split at all) in a container (jar, mason jar, etc.) for 8-12 h, preferably overnight, discard the water, then germinate them in the same container with a small grid or similar for several days, depending on the type of seed. Rinse them from time to time.
Ingredients
Salad
- 2 cups sprouted lentils (see notes)
- 2 pears, diced
- 2 green onions, sliced into rings
Place all ingredients in a bowl.
Dressing
- 1/4 cup olive oil
- Juice of 1/2 lemon
- 1/2 or 1 garlic clove (I prefer to use a little more than half)
- 2 tablespoons agave syrup
- 1 teaspoon ground mustard
- 1 pinch salt
- A little ground pepper
Preparation
- Place all ingredients in a bowl or mini blender, and whisk until emulsified.
- Add the dressing to the salad and mix well.
- Leave to stand in the fridge for 30 minutes to ensure that the flavours are well integrated (if you're a little more patient).
Notes
Soak lentils for 8 to 15 hours. After 3-4 days of germination, 1 cup of lentils can yield around 2-4 cups, depending on the length of the shoots.
