With this recipe for Bánh mì with smoked tofu, revisit one of the classics of Vietnamese cuisine. Instead of meat, this version uses thick slices of sriracha-smoked tofu. Not lacking in spice, these bánh mì sandwiches are perfect for eating on the go.

Ingredients
- 1 pack of Sunrise Sriracha smoked tofu
- ½ juice and zest of half a lime
- 1 clove garlic, minced
- ½ tsp. ginger, chopped
- 1 fresh baguette, cut into sandwich-sized portions
- 1 tbsp. avocado oil Chosen Foods
- 4 tbsp. Chosen Foods mayonnaise-type vegan spread
- Pickled vegetables: daikon, carrots, cucumber
- Coriander sprigs for each sandwich
Preparation
1. Cut the tofu into slices about ½" thick. Place the tofu in a shallow pan and pour the marinade over it. Marinate for at least 15 minutes.
2. In a nonstick skillet, heat oil over medium-high heat. Brown tofu pieces for 2-3 minutes on each side, until golden-brown and edges are caramelized.
3. Prepare the sandwiches, starting with the mayonnaise, followed by the slices of
tofu, pickled vegetables and coriander. Serve immediately.
For a non-spicy version, opt for the Sunrise smoked tofu.
