For 15 lemon bites
Ingredients
- Juice of 1/2 lemon
- Zest of 1 lemon
- 1 cup of pitted dates
- 1 cup hulled millet, cooked
- 1 cup oat flour
- 1/4 cup grated coconut (optional)
N.B: For a gluten-free recipe, make sure the millet and oat flour are gluten-free.
Preparation
- Cook 1 cup of millet in 2 cups of water. When all the water is absorbed, the millet is cooked (takes an average of 15 minutes). Crumble with a fork and leave to rest under a lid for 10 minutes off the heat.
- Place all ingredients (except coconut) in a food processor and pulse until smooth.
- Place on a baking sheet with parchment paper in the fridge for 2 hours.
- Keep for 5-6 days in an airtight container.
Tip: We strongly recommend toasting the millet before cooking: in a skillet, cook the millet over high heat until golden brown, about 4-5 minutes. Be careful not to let it burn.
