Ingredients
- 1 1/2 cups quick-cooking rolled oats
- 1/4 cup all-purpose whole-wheat flour (or gluten-free flour)
- 1 tsp. baking soda
- 1/4 teaspoon sea salt
- 2/3 cup natural nut butter of your choice (e.g. peanut butter, cashew butter)
- 6 to 8 tablespoons maple syrup (to taste)
- 1 tsp. vanilla extract
- 1 jar (235 ml) fruit jam (your choice)
Preparation
- Preheat oven to 350 F and grease an 8" square baking sheet.
- In a large bowl, combine rolled oats, flour, baking soda and salt.
- In a small bowl, stir the nut butter into the dry ingredients until the mixture is smooth and lumpy.
- Reserve 1/2 cup of dough for finishing. Spread remaining dough evenly on baking sheet.
- Spread jam over dough.
- Crumble dough reserved for top.
- Bake for 25 minutes or until golden.
- Cool before cutting into squares.
