Recipe: Thai curry with beans

This Thai-inspired curry recipe is easy to make and full of flavor. Serve with quinoa or rice.
Makes: 4 servings
Ingredients:
-1 red bell pepper, diced
-3 tbsp. coconut oil
-2 cloves of garlic, minced
-1 package green onion; white and green separated, chopped
-398ml diced tomatoes without salt
-400ml Earth's Choice coconut milk
-398ml black beans, drained
-398ml chickpeas, drained
-2 tbsp. lime or lemon juice
-1 tbsp. fresh ginger, grated
-2 cups of vegetable broth
-2 tbsp. curry spices
Preparation:
In a large pot, heat oil over medium heat. Add bell bell pepper and white of green onions. Brown slightly. Add minced garlic, ginger, coconut milk and bring to a boil. Reduce heat and simmer for 5 minutes. Add black beans, chickpeas, tomatoes and spices. Simmer for 5 minutes then add water and lime/lemon juice. Bring to a boil and simmer for 20 minutes. Adjust seasoning. Garnish with the green section of the green onions.
