The adventure of the ancestor cheese dairy began in the heart of Center-du-Québec in 1986, when dairy producers made the decision to revolutionize their production method. Their choice is made on an environmentally friendly approach, where the soil is considered a living organization - this is the beginning of their commitment to organic farming. Through tests, seminars, field visits and group exchanges, these producers refine their skills and perfect their techniques.

The agricultural habits of the founders undergo a radical transformation. They experiment with alternative approaches to care for their cows, rethink the aging of calves, adopt composting and ecological manure, and discover the benefits of crop rotation. Their daily lives harmonize with the ecosystem that surrounds them.

With their common experience, the ten founders decide to create the entity that will become the ancestor. Their mission is singular: promoting organic milk in a distinctive way. Rather than following conventional methods, they transform organic milk into a range of organic cheeses.

After years of diligent work and perseverance, an organic cheddar developed from unpasteurized milk was created in the fall of 1993. The reception reserved for these products is so enthusiastic that in 1996, this collective of farmers concretizes its Dream by erecting the L’Entrese cheese dairy.
