This flour is produced by milling organic wheat. It is sifted to remove the bran and make it lighter. Sometimes called bise, it's halfway between white flour and wholemeal flour. Highly prized in bakeries, it is recommended for baguettes, muffins and breads.
Organic sifted flour can be stored for between 270 and 365 days. It's best to store flour in an airtight container in a cool, dry, dark place, or in the freezer.

La Milanaise is a family-run business. All the grains used come from organic farms, i.e. using only compost, green manure and healthy crop rotations to maintain high soil fertility. The flours are freshly ground on millstones to preserve all their quality and nutritional value.
