*To make oat flour, pulverize 3 cups of oat flakes in a high-powered blender until a floury powder forms.

  • In a medium-sized bowl, mix thecoconut oil coconut oil, the maple syrup and egg.
  • In a second bowl, combine oat flour, collagen, cocoa powder, baking powder and salt.
  • Stir wet ingredients into dry ingredients. Mix well and add semi-sweet chocolate chips.
  • Refrigerate dough for a minimum of one hour.
  • Preheat oven to 350°C. Place rack in center of oven.
  • Make balls from the previously chilled cookie dough (the dough will be very dense, so add a tablespoon of water if necessary to moisten it). Using one and a half tablespoons per cookie, you'll get 15 cookies.
  • Place on a baking sheet and bake for 15 minutes, or until lightly cracked on all sides.
  • Let stand 30 minutes before eating or storing.
