Oat and flaxseed drink (milk) - raw; vegan option; gluten-free option
We are currently witnessing a slowdown in the consumption of dairy products, particularly bovine milk. For many reasons, people are increasingly turning to plant-based beverages, including almond, coconut and soy beverages. Plant-based beverages that are still gaining ground include oat beverages and flax beverages. Here's a recipe for a plant-based drink (milk) that lets you explore the rich, silky texture of oats, while benefiting from the omega-3 content of flax. It's a refreshing drink with a delicate taste.
Preparation: 10 minutes Cooking time: none Level: beginner
Ingredients
Preferably use organic ingredients.
- 5 cups filtered water
- 1 cup corn flakesrolled oats *
- 2 tablespoons whole flax seeds
- 1 tablespoon raw honey **
- 1 teaspoon vanilla extract
*for a gluten-free drink, opt for certified gluten-free oats
**for a vegan drink, replace honey by 5 Medjool dates
Approach
- Place the water rolled oats and flax seeds in a high-powered blender. Blend on high for one minute.
- Place a milk or sprout bag over the opening of a bowl or container. (A clean nylon stocking can replace the bag).
- Pour the "milk" into the bag so that the liquid ends up in the container.
- Drain and squeeze out the "milk" so that only the pulp remains in the bag and the liquid is in the container. Discard the pulp or save it for another recipe (cake, muffin, bread).
- Return the strained "milk" to the blender and add the sweetener (honey or dates) and vanilla. Blend on high for 10 seconds.
- Repeat steps 2 to 4 for a second filtration.
- Store in the fridge and consume cold, within 3 to 4 days. Separation is normal, so stir vigorously before drinking.
Important: the oat-flax drink will become gelatinous if heated.
