INGREDIENTS
- 4 large portobello mushrooms
- 2 zucchini, sliced lengthwise
- 2 red peppers
- 2 red onions, quartered
- 8 slices cheese, ½ cm (¼ in.) thick
- 90 ml olive oil
- 4 sesame burger buns
- A few arugula leaves
- For the balsamic marinade
- 160 ml olive oil
- 30 ml balsamic vinegar
- 15 ml freshly squeezed lemon juice
- 2 garlic cloves, chopped
- salt and pepper
Preparation
Preparing the marinade
- Combine all the ingredients for the balsamic marinade in a dish and set aside.
- Preheat barbecue over high heat and oil grill.
Preparing the burgers
- Cut peppers into 4 equal pieces. Remove seeds and excess flesh to obtain a uniform slice. Clean mushroom caps with a spoon.
- On a metal plate, coat the vegetables with the balsamic marinade.
- Grill vegetables for 3-5 minutes on each side. Add the goat's cheese to the mushrooms and wait about 1 minute for the cheese to melt.
- Assemble the burgers by overlapping a slice of each vegetable, then garnish with arugula.
