Recipe: portobello burger with goat cheese and grilled vegetables

Recette : burger de portobello au chèvre et aux légumes grillés - La Boite à Grains

INGREDIENTS

  • 4 large portobello mushrooms
  • 2 zucchini, sliced lengthwise
  • 2 red peppers
  • 2 red onions, quartered
  • 8 slices cheese, ½ cm (¼ in.) thick
  • 90 ml olive oil
  • 4 sesame burger buns
  • A few arugula leaves
  • For the balsamic marinade
    • 160 ml olive oil
    • 30 ml balsamic vinegar
    • 15 ml freshly squeezed lemon juice
    • 2 garlic cloves, chopped
    • salt and pepper

Preparation :

1.Preparing the marinade

Combine all the ingredients for the balsamic marinade in a dish and set aside.

Preheat barbecue over high heat and oil grill.

Preparing the burgers

Cut peppers into 4 equal pieces. Remove seeds and excess flesh to obtain a uniform slice. Clean mushroom caps with a spoon.

On a metal plate, coat the vegetables with the balsamic marinade.

Grill vegetables for 3-5 minutes on each side. Add the goat's cheese to the mushrooms and wait about 1 minute for the cheese to melt.

Assemble the burgers by overlapping a slice of each vegetable, then garnish with arugula.
