Home Sandwiches Recipe: Portobello burger with goat cheese and grilled vegetables Recipe: Portobello burger with goat cheese and grilled vegetables by La Boite à Grains 05 Jun 2024 INGREDIENTS 4 large portobello mushrooms 2 zucchini, sliced lengthwise 2 red peppers 2 red onions, quartered 8 slices cheese, ½ cm (¼ in.) thick 90 ml olive oil 4 sesame burger buns A few arugula leaves For the balsamic marinade 160 ml olive oil 30 ml balsamic vinegar 15 ml freshly squeezed lemon juice 2 garlic cloves, chopped salt and pepper Preparation Preparing the marinade Combine all the ingredients for the balsamic marinade in a dish and set aside. Preheat barbecue over high heat and oil grill. Preparing the burgers Cut peppers into 4 equal pieces. Remove seeds and excess flesh to obtain a uniform slice. Clean mushroom caps with a spoon. On a metal plate, coat the vegetables with the balsamic marinade. Grill vegetables for 3-5 minutes on each side. Add the goat's cheese to the mushrooms and wait about 1 minute for the cheese to melt.
