Ingredients
- ¼ cup of sunflower seeds
- 2 tbsp. whole flax seeds
- 2 tbsp. whole chia seeds
- ¾ cup raw almond butter
- 1 cup ofsulfite-free dried apricots (+/- 25 apricots)
- 1 tbsp.vanilla extract
- 1 cup of shelled hemp heartshalved
Process
- In a food processor, grind organic sunflower and flax seeds. Transfer the seeds to a bowl and add the whole chia seeds.
- In a food processor, combine the almond butter, dried apricots and vanilla extract. Process until the ingredients form a thick, homogeneous paste. Depending on the efficiency of your food processor, this may take a few minutes.
- Transfer the almond and apricot butter paste to the dry ingredients bowl. Add ½ cup shelled hemp hearts and mix vigorously.
- Spread the second half of the shelled hemp hearts on a small plate.
- To shape energy balls: Take 1 tablespoon of energy mixture and roll it between your hands.
- Roll each energy ball in the hemp hearts to cover them. If necessary, add 1 tsp. water to your energy mix to make it slightly stickier.
Makes 25 energy balls, which keep for 5 days in an airtight container at room temperature, or for 2 weeks in the fridge.
