With apple season in full swing and self-picking becoming increasingly popular, many are picking themselves up with more apples than they can chew. Low in allergens, this vegan apple maple iced fudge will satisfy your sweet tooth while making a refreshing change to classics like apple pie and apple crisp.

Vegan Apple Maple Fudge Ingredients
2 cups organic apples, peeled and diced (3-4 medium apples)
½ cup organic maple syrup
1 cup of organic raw cashews
½ cup organic coconut oil
¼ cup organic tahini
½ tsp. organic ground cinnamon (adjust to taste)
¼ tsp. organic ground nutmeg (adjust to taste)
½ tsp.organic vanilla extract
¼ tsp. sea salt
Optional: A few pinches of coarse salt and more cinnamon.
Preparation for Vegan Apple and Maple Glazed Fudge
- In a skillet, cook the apples with the maple syrup over medium-high heat until liquid is reduced and apples are caramelized; about 5 minutes.
- Add the cashews, l'coconut oilcoconut tahiniand cinnamonand nutmegand salt. Cook for another 5 minutes.
- Place the mixture in a food processor and add thevanilla extractand purée until smooth.
- Line the bottom of a 9 x 9-inch baking dish with parchment paper, long enough to cover 2 of the sides, for easy removal of dessert.
- Use a rubber spatula to empty the contents of the food processor into the baking dish. Use the spatula to smooth out the mixture.
Optional: Sprinkle with additional cinnamon and/or coarse salt.
- Freeze, uncovered, for 3 hours or until frozen.
- Remove dessert from freezer and cut with a knife into 8 rows, then 8 columns, for a total of 64 small pieces.
- Store in an airtight container with wax paper between each layer of fudge.
- Keeps up to 1 month in the freezer.
Chef's tip: Remove a few minutes before serving.
