Recipe: leek and tomato spread with Brie cheese

Ingredients
1 leek, white and light green parts only, cleaned
1 tablespoon olive oil, plus a drizzle to drizzle over the toast
½ tsp dried oregano
2 slices country bread, lightly toasted
45g Brie cheese, thinly sliced
1 Italian tomato, thinly sliced
Preparation:
1.Prepare the leek. Discard the dark green part, finely cut the white and light green parts.
Heat oil in a pan over medium heat. Add leek pieces and oregano, salt and pepper. Cook, stirring occasionally, until leek pieces are tender and starting to brown, about 15 to 20 minutes.
Arrange toasted bread slices on a baking sheet. Spread the cheese on the slices, place the leek pieces and tomatoes on top, drizzle with oil and add salt and pepper to taste.
Place in the oven about 10 cm from the heating element and bake at " ".broilPlace in oven about 10 cm from heat and broil until cheese has melted and tomatoes are starting to brown, about 5-7 min. Serve immediately.
