My mother's favourite dessert

Ingredients
- 1 package (284 g) fresh or frozen raspberries (thawed)
- 100 g chocolate + a few shavings for decoration
- 3 eggs (whites and yolks separated)
- 2 tablespoons brown cane sugar
- 1 pinch salt
- 1 scoop powdered Botanica Perfect Chocolate Protein Powder*
*Protein powder is not essential to the success of this recipe, but it greatly increases the nutritional value (20 g protein, 5 g fiber, 5 mg iron, and several amino acids).
Approach
- Place the raspberries in a food processor and grind to a purée.
- Over a medium-sized bowl, strain the raspberry purée through a fine sieve to remove the seeds. If you don't have a fine sieve, simply use a nut bag or clean nylon stocking.
- Chop the chocolate and place in a bain-marie. Melt the chocolate, stirring constantly.
- Remove the chocolate from the heat and add the egg yolks, raspberry purée, baking powder and sugar. Botanica Perfect Protein and sugar. Stir vigorously and set aside.
- Place egg whites and salt in a medium bowl. Using a hand mixer, beat the egg whites until stiff.
- Gradually add the egg whites to the chocolate-raspberry mixture, stirring gently with a flexible spatula. The egg whites should remain frothy, yet blend evenly with the chocolate and raspberry purée.
- Divide the chocolate-raspberry mousse between 6 to 8 verrines. Decorate with a few shavings of semi-dark chocolate and refrigerate for at least two hours.
- Keep the mousse refrigerated until ready to serve.
