Tamari pesto salad

Here's a meal salad that's out of the ordinary. It's complete, tasty and highly textured. It can be served for lunch or dinner, and you can even have fun adding extra protein sources for extra support. You should know, however, that baby greens are a complete vegetable protein source, and almonds are also very sustaining.
The tamari pesto vinaigrette (a real revelation) offers an explosion of flavour and will enhance your salad with its bold taste. Feel free to double or even triple the vinaigrette recipe and store it in the fridge to drizzle over your other favorite salads. This vinaigrette works wonders on a salad of orzo and sun-dried tomatoes!
Serves: 2 lunch salads
Ingredients
- 4 oz. pre-washed lettuce
- 1 medium raw beet, sliced
- 3/4 cup grated or julienned carrots
- 1/2 avocado
- Handful of baby greens
- 1/4 cup oftamari almonds (check that these are gluten-free if necessary)
Tamari-pesto dressing
- 1/3 cup extra-virgin olive oil
- 1 tablespoon Marcello pesto (try lovage pesto for a lighter recipe, or the nut-free, cheese-free version for allergy sufferers)
- 3 tablespoons fresh lemon juice
- 1.5 tablespoons apple cider vinegar
- 1.5 tbsp tamari (check that it is gluten-free if necessary)
- 1/2 teaspoon dijon mustard
- Black pepper to taste
Preparation
- In a salad bowl, combine the washed lettuce, vegetables, legumes and nuts.
- Place all dressing ingredients in a jar or other airtight container and, after closing the lid, shake vigorously.
- Drizzle the dressing over your salad and enjoy!
