Comforting Vegetable Stew
With the cold winter weather setting in and the days getting shorter, we are looking for comfort food. Salads are scarce, soups and hot dishes are taking over. Do yourself a favor with this vegetable stew recipe, which is low in FODMAPs and therefore gentler on the digestive system.

Ingredients of the Stew of vegetables comforting
- 2 cups of organic brown rice
- 2 tablespoons of cornstarch
- 1/4 cup oforganic olive oil
- 2 cups of diced carrots (about 2 medium to large carrots)
- 2 cups diced celery (about 5 stalks)
- 2 cups diced parsnips (about 1 large)
- 2 teaspoons of dried thyme
- 2 teaspoons of dried rosemary
- 3 cups sweet potatoes, peeled and chopped (1 large)
- 3 cups red potatoes, peeled and chopped (2-3 potatoes)
- 5 cups kale, stems removed + torn into small pieces (1 large bunch)
- 4 cups of broth from organic vegetable broth
- 1 jar of Fody vegan bolognese sauce
- 1 package of tofu drained and cut into cubes
- Salt and pepperto taste
Procedure for the Vegetable stew comforting
1. Cook rice as directed. In a small bowl, whisk cornstarch with 2 tablespoons water to make a slurry. Set aside.
2. Heat olive oil in a very large saucepan over medium-high heat (if you only have a medium-sized saucepan, you can halve this recipe).
3. Add diced carrots, celery, parsnips, thyme and rosemary to the pan. Stir and cook for 5 minutes.
4. Add sweet potatoes, red potatoes, Bolognese sauce, vegetable broth and kale. Mix ingredients well and season with salt and pepper.
5. Stir in cornstarch slurry and bring liquid to a boil.
6. Once boiling, reduce heat to medium-low and simmer (uncovered) for 25 minutes.
7. After 25 minutes, gently stir the cubed tofu into the pot and continue to cook for an additional 10-15 minutes, or until the vegetables are fork tender (but not falling apart).
8. Serve the stew over brown rice and enjoy hot!
