Recipe: quinoa cake

Here's a fun recipe that will save your back-to-school dinners and please the whole family. It's a variation on my cereal patties: instead of pan-frying them, I had the idea of baking them in muffin tins in the oven. The result is amazing! Even softer and easier to bake, there's no need to stand in front of the frying pan to avoid toasting the patties.
Serve with vegetables or crudités for a balanced, gourmet meal.
Ingredients
- 1.5 cups quinoa
- 1 teaspoon vegetable bouillon powder
- 1 leek, thinly sliced
- 2 eggs
- 2 tablespoons flour
- 100 ml single cream
Procedure
- Cook the quinoa and chopped leek for a good 10 minutes in water to which the vegetable stock has been added. Leave to swell for 5 minutes before draining. This leaves the quinoa soft and puffy.
- Beat the eggs and cream in a bowl. Season with salt and pepper, and add the quinoa to the leeks. Sprinkle with flour and mix with a spoon.
- Butter muffin tins. Pour in the mixture and bake for 25 minutes at 325°C.
