Good news for vegan fans: it's possible to succumb to the pleasure of Caesar salad without having to compromise your dietary choices!
La Boite à Grains is now a retailer of vegan products at Aux Vivres and Paradis Végétarien, making it easy to prepare this 100% vegan Caesar salad.
This Caesar salad recipe is tasty and easy to prepare, requiring just 5 ingredients and less than 10 minutes. It's a pleasant way to lighten up quick meals on busy evenings.
Ingredients
7 slices Paradis Végétarien bacon
7 kale leaves, washed and chopped
1 teaspoonolive oil
1 cup homemade or store-bought multigrain croutons (click here to see how to make your own vegan croutons from rice cakes)
1 cup (or to taste) Aux Vivres Caesar dressing
Toppings (optional)
Lemon slice
Ground black pepper
Preparation
- Place the rack in the middle of the oven and preheat the oven to 450°C. oF
- Place the 7 bacon slices on a baking sheet. Bake for 12 minutes, or until the slices turn golden brown and crisp.
- Meanwhile, prepare the kale. Place in a large bowl and drizzle with olive oil. Knead the kale for two or three minutes, or until its volume has reduced by half.
- Add the croutons and bacon when cooked and cooled.
- Add Aux Vivres Caesar dressing and toss generously.
- Garnish with slices of lemon or black pepper and serve cold.
*This technique is called kale kneading. It is used to soften the fibers of this leafy plant, which are otherwise very tough and difficult to digest. You'll find that kale adopts a sweeter taste once kneaded, and you'll feel less bloated after eating it.
