Good news for fans of veganism: it is possible to succumb to the pleasure of Caesar salad without having to compromise your food choices!
La Boite à Grains is now a retailer of vegan products Aux Vivres and Paradis Végétarien, which makes it easier to prepare this 100% vegan Caesar salad.
This Caesar salad recipe is tasty and easy to make, preparing with just 5 ingredients and in less than 10 minutes. This pleasantly lightens your quick meals on busy evenings.
Ingredients
7 slices of vegan bacon
7 kale leaves, washed and chopped
1 teaspoon ofolive oil
1 cup store-bought or homemade multigrain croutons (click here to see how to make your own vegan croutons from rice cakes)
1 cup (or to taste) of Vegan Caesar Dressing
Toppings (optional)
Lemon slice
Preparation
- Place the rack in the center of the oven and preheat the oven to 450 oF
- Place the 7 slices of bacon on a baking sheet. Bake for 12 minutes or until the slices are golden brown and crispy.
- Meanwhile, prepare the kale. Place it in a large salad bowl and drizzle with olive oil. Knead the kale for two to three minutes, or until its volume has reduced by half.*
- Add the croutons and the bacon when cooked and cooled.
- Add the Cesar Aux Vivres vinaigrette and stir generously.
- Garnish with lemon slices or black pepper and serve cold.
*This technique is called kneading kale. It is used to soften the fibers of this leafy tree, which is otherwise very tough and difficult to digest. You will find that the kale takes on a sweeter taste once kneaded, so you will feel less bloated after eating it.
