Interview with Vincent
Why this cheese?
This cheese comes from the Magdalen Islands, where the products are often out of the ordinary. The cows are fed salted grass, which gives Jeune Cœur its distinctive taste. It reminds me of the French cheeses found in Normandy, with a lovely creaminess. It's a local specialty worth discovering.
Accompanied by a slice of fresh bread?
Yes, of course, with fresh bread and a glass of red wine! It's a great transition at the end of the meal, before dessert.
Let's talk about healthy eating. What does it mean to you?
I try to have a good balance in my day, with vegetarian meals at lunchtime and dishes that include meat in the evening. I do a lot of sport and am very active, so I make sure I eat a good amount of protein. I stay fairly disciplined during the week, if you can put it that way, and on Fridays I allow myself a little more freedom, making a homemade pizza for example, topped with tasty ingredients.
We're lucky here in La Boite à Grains to have access to tasty, healthy ingredients with good values. It's important to me to pass on these values and a taste for healthy eating to my son.
Do you have a favorite meal?
My favorite meal is fish. I try to eat it at least once a week, whether in pasta, with rice, poke bowls or sushi. We're pretty spoiled in Quebec in terms of fish quality and variety, and it's a healthy protein.
Do you have any healthy habits to share?
In summer, I do a lot of cycling, taking advantage of the superb trails in Gatineau Park. And in winter, it's cross-country skiing and skating that take over. The idea is to spend as much time as possible in nature. I also do wildlife photography. Winter goes by so much quicker when you're doing outdoor activities!
Thank you Vincent for sharing your passion with us!
Don't hesitate to say hello to Vincent the next time you visit our Aylmer branch.😊
