The dragon bowl is rapidly gaining in popularity. Well known under the name of Buddha bowla whole-grain base with a protein source and colorful vegetables. The dragon bowl is a healthy, balanced meal. Here's a vegan recipe in which the dragon bowl is drizzled with a delicious sesame-maple sauce for a nutritious, tasty and satisfying experience.

Ingredients for Vegetarian Dragon Bowl with maple and sesame flavours
- ½ cup Japanese black rice
- 1 small sweet potato, peeled and cut into ¼-inch slices
- 2 tablespoonsolive oil or avocado oil
- Salt
- 1 slice red cabbage, cut into strips
- 1 sprig kale, rinsed and chopped
- ½ cup ofedamame frozen
- 1 avocado, halved
Maple and sesame sauce
- ¼ cup olive oil or avocado oil
- 2 tablespoons sauce tamari sauce
- 2 tablespoons maple syrup
- 1 tablespoon toasted sesame oil
- 1 tablespoon tahini (sesame butter)
- 1 tablespoon fresh lime juice
Instructions for Vegetarian Dragon Bowl with maple and sesame flavours
- Rinse and drain the Japanese rice in a colander.
- In a medium-sized pot, cook the Japanese rice according to the manufacturer's instructions.
- Meanwhile, preheat oven to 375 degrees Fahrenheit.
- Place the sweet potato slices on a baking sheet. Drizzle with oil, season with salt and bake for 20 minutes.
- In a steamer, cook the red cabbage strips and frozen edamame for 5 minutes. Add the kale for a final minute. Remove the vegetables and set aside.
- In a bowl, whisk together all the ingredients for the maple-sesame sauce.
- To assemble the bowls, divide the rice into two portions. Top the rice with the cooked vegetables, edamame and avocado, then drizzle with the maple-sesame sauce.
