Ingredients for Flourless Banana Pancakes
- 1 ripe banana
- 1/2 tsp. vanilla extract
- 2 tbsp. ground golden linseed (or organic golden linseed previously ground for the recipe)
- 1 tsp. organic whole black chia seeds
- 1/2 cup of organic rolled oats
- 1/4 tsp. organic Ceylon cinnamon powder
- Organic virgin coconut oil for cooking
Culinary tools (optional):
- Electric blender or coffee grinder
Approach
- In a blender or coffee grinder, grind the flax seeds (optional).
- In a small bowl, combine 2 tbsp. ground flax seeds with 4 tbsp. water. Allow to swell for 5 minutes (yields 2 flax eggs).
- In a large bowl, mashed potato banana with a fork until smooth. Add the flax eggs, the chia seedsseeds cinnamon and vanilla essence. Set aside for later use.
- Pour in rolled oats over liquid ingredients. Stir with a spoon. Leave to stand for 15 minutes (or overnight if you want to save time!).
- Heat a non-stick frying pan over medium heat and brush with coconut oil.
- Spoon about 1/3 cup of the mixture into the pan. Flatten with the back of a spoon. Repeat three times.
- Cook for 6-7 minutes, then turn over and cook for a further 6-7 minutes, until golden brown.
- Serve with topping(s) of your choice.
Tips and tricks
Topping ideas: chopped fresh fruit, maple syrup, nut butter, Greek yogurt, carob chips or toasted coconut flakes.
Substitutions
- You can easily substitute flax eggs with chicken eggs
- Replace coconut oil with butter if desired.
