Nutritional yeast belongs to a family of yeasts known as the saccharomyces cerevisiae, like baker's yeast and brewer's yeast. It's a yeast that can be used by everyone, even people with candida albicans problems, because nutritional yeast contains no trace of active yeast, making it inert.

Crudités Dip

Ingredients
- 1 ½ cups raw cashews soaked for 4 hours
- 1 cup water
- 2 tablespoons lemon juice
- 2 tablespoons apple cider vinegar
- 2 tbsp. nutritional yeast flakes
- 1 small garlic clove
- 1 tablespoon each of the following chopped herbs: fresh chives, fresh coriander (replace with dill if desired) and flat-leaf parsley
- 1 teaspoon each of salt
Procedure
Rinse and drain cashew nuts and drain. Place all ingredients except fresh herbs in a food processor and puree. Transfer to a bowl and add fresh herbs. Makes about two cups of dip, enough for a large veggie platter.
Dehydrated broth
Chicken broth purchased in conventional grocery stores is a highly processed product containing flavor enhancers, colorants and preservatives. But making your own dehydrated broth is simple. Made from nutritional yeast, dehydrated broth perfectly mimics the taste and color of powdered chicken broth, and is both healthy and nutritious.
Ingredients
- 3 cups of nutritional yeast flakes
- ¼ cup salt Herbamare
- 2 tablespoons dehydrated onions
- 1 teaspoon garlic powder
Approach
Pulverize in a blender to obtain a yellowish powder for use as a stock base in soups, marinades, stews and more! Simply dissolve 1 tablespoon of dehydrated stock for every 250ml of water. Store at room temperature for up to 6 months in an airtight container.
Kale chips
Kale chips make excellent healthy snacks. Crisp and lightly salted, these kale chips will charm you with their light nutty, cheesy taste. With kale growing in abundance in our region, they're the perfect snack for a local, zero-waste pantry.
Ingredients
- 1 bunch kale
- 1/3 cup of raw sunflower seeds
- ¼ cup cooking oil
- ¼ cup nutritional yeast flakes
- 1 tablespoon apple cider vinegar
- ½ tsp. salt
- ¼ teaspoon of garlic powder
Approach
Trim the kale by removing the central stems and cutting off large chunks of leaves. Set aside. Grind the sunflower seeds in a food processor. Add remaining ingredients. Add the mixture prepared in the food processor to the kale leaves and massage the kale to distribute the seasoning evenly.
Cook at 250oF on a baking sheet for 40 minutes, or until kale is crisp. Place kale chips on paper towel to absorb excess oil. Let cool on paper. Eat within 5 days.
