The arrival of good weather makes us want to eat lighter and this refreshing salad with mango and young shoots has everything to satisfy you.
This salad features young shoots, also called microgreens. These are incredible nutritional stores full of flavor and crunch.
In this salad, textures and flavors combine to enhance the bitterness of the young shoots. A simple walnut vinaigrette subtly enhances the flavors and leaves this julienne and baby greens salad perfectly creamy.
Ingredients
2 cups mixed baby greens*
1 cup julienned carrots
1 mango, peeled and cut into julienne strips
Dressing
2 tablespoons ofwalnut oil
2 tablespoons ofolive oil
2 tablespoons of lime juice freshly squeezed
1 tablespoon of apple cider vinegar
1 teaspoon freshly grated ginger

Preparation
- Measure the young shoots and julienned vegetables. Transfer everything to a salad bowl.
- In a small bowl, whisk together all the vinaigrette ingredients.
- Pour the vinaigrette over the salad. Stir gently.
- Salt to taste and decorate with a few sprouts.
- Serve immediately.
- Keeps for a day in the refrigerator.
