The arrival of fine weather makes us want to eat more lightly, and this refreshing mango and baby greens salad has everything you need.
This salad features baby greens, also known as microgreens. They're an incredible nutritional reserve, full of flavor and crunch.
In this salad, textures and flavors come together to complement the bitterness of the baby greens. An easy-to-make walnut vinaigrette subtly enhances the flavors, leaving this salad of julienne and baby greens perfectly creamy.
Ingredients
2 cups mixed baby greens*, mixed with walnuts
1 cup julienned carrots
1 mango, peeled and julienned
Dressing
2 tablespoons walnut oil
2 tablespoonsolive oil
2 tablespoons freshly squeezed lime juice
1 tablespoon apple cider vinegar
1 teaspoon freshly grated ginger
Salt

Preparation
- Measure sprouts and julienne vegetables. Transfer to a salad bowl.
- In a small bowl, whisk together all the ingredients for the vinaigrette.
- Pour dressing over salad. Toss gently.
- Add salt to taste and garnish with a few sprouts.
- Serve immediately.
- Keep up to one day in the refrigerator.
